Master the art of the baguette. Jim Amaral, founder of Borealis Breads, will demonstrate how to make two styles of baguette. First, the classic French baguette which will be leavened with a pre-ferment to create a light airy crumb and a crispy crust. The second will be a sourdough baguette made with a 75 year old sourdough starter and will include some whole grain flours. Jim will demonstrate both recipes and will cover mixing, proofing, shaping, and baking of these classic breads.
