A favorite at Christmas time, pecan filled snowball cookies are scrumptious all year round!
2 C AP flour
2 C Finely chopped pecans
1/4 C Granulated sugar
1 C Unsalted butter, softened
1 teasp Vanilla
Powdered sugar for rolling
Heat oven to 325°F. In a large mixing bowl combine flour, nuts, sugar, butter, and vanilla. Beat at a low speed, scraping bowl often until well mixed, about 3-4 minutes. Shape rounded teaspoonfuls (small ice cream scoop works great!) of dough into 1” balls. Place on ungreased cookie sheet. Bake for 18-25 minutes or until lightly browned. Remove immediately. Roll in powdered sugar while still warm and then again when cool. Makes 3 dozen.
