Le Creuset Balsamic Shallot Jam
Who says jam has to be sweet? In this savory and tangy version, shallots are simmered with brown sugar and balsamic vinegar to create a naturally savory jam with a touch of sweetness. It’s a deliciously indulgent burger topping or addition to a cheese plate, and keeps well in the fridge so it’s ready at a moment’s notice.

1 Tbsp Unsalted Butter
2 # Shallots, peeled and sliced
2 sprigs Fresh Thyme
½ C Brown Sugar
1 C Balsamic Vinegar

Melt the butter in a saucepan set over medium-low heat.
Add the shallots and thyme sprigs and cook until shallots are softened and starting to caramelize – about 8-10 minutes.
Add the brown sugar and balsamic vinegar, and continue cooking until the sugar is dissolved and the mixture thickens to a jam-like consistency., about 5-10 minutes longer.

Remove from heat and remove thyme sprigs.
Season with salt to taste, and allow to cool before packaging.
Keep refrigerated.
