It’s Fat Tuesday and even though it’s snowing, sleeting, raining, and just generally yuck outside we’re not letting that stop us from laissez les bons temps rouler!

1 Egg
3 C Self-rising flour
1 tsp Yeast
1/4 C Granulated sugar
1/2 C Hot water
Oil for deep frying
Powdered sugar and cinnamon for rolling

Cutting Beignets

Frying Beignets

Combine hot water and sugar. Stir in yeast, combine with egg and flour to make a soft dough. Cover and let sit for 15 minutes. Roll dough out until it is 1/4 in thick and cut into 2 inch squares. Deep fry in 350°F oil. Roll in powdered sugar and cinnamon. Eat warm!
