Chocolate Stout Cake

Think rich, chocolatey, decadent, cozy… This cake is really easy to whip up, and makes a big impact. Ice it with the Cream Cheese Frosting included in the recipe (chocolate or plain!), whip up your favorite buttercream – or eat it as is, unfrosted. We added some mini semi-sweet chips to the cake recipe for a little extra boost of chocolate.
1 C Bath Brewing Company Maritime Stout
10 Tbsp Butter
¾ C Unsweetened Cocoa Powder
2 C Sugar
¾ C Sour Cream
2 ea Eggs
1 Tbsp Vanilla
2 C Flour
1½ teasp Baking Soda
1 C Mini semi-sweet chips (or walnuts, or anything else you want in it!)
Icing:
1¼ C Powdered Sugar
8 oz Cream Cheese, room temperature
½ C Heavy Cream
¼ C Cocoa Powder (optional)
Preheat the oven to 350F.
Butter a 8” or 9” springform pan, and line the bottom with parchment. (The small pan will take a little longer to bake.)
In a heavy-duty saucepan, on medium heat, melt the butter together with the stout, and remove from the heat.
Whisk together the cocoa powder and sugar, add to the butter/stout.
In a separate bowl, mix sour cream, eggs and vanilla, then add to other mixture.
Whisk together flour and baking soda, then stir or whisk in until smooth.
Pour into the prepared springform pan and bake for 45 minutes. For 8” pan, add another 10-15. (For both pans, a toothpick stuck in the center should come out clean when it’s done, otherwise add a couple more minutes – but not too long!)
Let cool in the pan for 10-15 minutes. Ice when completely cool.
