Corn and Cheese Ebelskivers Recipe

Ebelskivers are round pancakes, traditionally filled with apple slices, thus the name (ebelskivers means “apple slices” in Danish). Batter is poured into a griddle with curved divots, and any manner of utensil is used to flip the pancakes as they cook so that the spheres are uniformly golden. While ebelskivers are usually a sweet treat, this version is a savory spin. You can find Nordicware Ebelskiver pans at Now You’re Cooking.

1 cup all-purpose flour
1/2 cup yellow cornmeal
1 tsp baking soda
1/2 tsp baking bowder
1 tsp sugar
1/4 tsp salt
1 cup buttermilk
1 cup plain Greek-style yogurt
2 large eggs, beaten
1/3 cup minced cilantro
1 jalapeño, minced
zest of a lime
2 Tbsp butter, plus 1 tsp butter, cold, cut into 1/2 tsp cubes
26 cheese cubes, about 1/2 tsp-size each (use your favorite, such as cheddar or queso fresco)
Lime wedges and honey, for serving

Sift flour, cornmeal, baking soda, sugar, baking powder, and salt together in a large mixing bowl. In a separate bowl, whisk together the buttermilk, yogurt, eggs, zest, cilantro, and jalapeño. Add wet ingredients to dry and combine well. Set batter aside for 5-10 minutes to prepare ebelskiver pan. Heat pan over medium-high heat. Add 1/4 tsp butter to each pancake well. Once butter melts, fill wells with batter (Note: beginners will have luck filling wells only 2/3 full. As you learn to fill and turn the cakes, add more batter for fuller, rounder cakes). When cakes are golden brown on the bottom and centers begin to bubble, loosen top edges with a fork, skewer, or chopstick. Use the tool to gently pull each cake so that the outer shell is perpendicular to the well and uncooked batter spreads at the bottom of the well. Tuck cheese into center of each cake. As bottom becomes golden, use tool to pull orb closed over the cheese. Rotate cake to seal all edges, turning several times, until golden orb forms and inside of pancake is cooked thoroughly. Use tool to life balls from pan. Serve immediately with honey and a squeeze of lime. Makes 26 Ebelskivers.
