1 cups+ flour
1 cup of spinach, puréed
1 T salt
In the bowl of a food processor combine egg and flour. Pulse a few times. Add spinach. Pulse until dough becomes elastic. You may need to add more flour if dough is too wet. Take out of the food processor and form into a rectangle. Dust with flour. Bring a quart of salted water to boil. Roll out through pasta machine into whatever form you’d like (we like fettuccini for this recipe). Cook for about 2 minutes. Serve directly with sauce or just sprinkled with some parmesan cheese.
Note, the cut pasta dries beautifully and can be frozen for future use.
