Making Energy Bites

 

A kid-friendly virtual cooking class! Vanessa and her helpers (her kids!) will lead us through the super simple steps to make these fun and healthy treats. The great thing about energy balls is that they use easy to find ingredients you may already have in your pantry and are also very accommodating to variations depending on what you have on hand instead. We’ll be making two recipes tomorrow: Peanut Butter Energy Bites and Strawberry Shortcake Bites. These recipes are very fluid and open to interpretation depending on what you have on hand, here’s an ingredient list:

Peanut Butter Bites (Modified from this recipe from Gimme Some Oven)
-1 Cup Dry Oatmeal – old fashioned is best
-2/3 Cup Desiccated Coconut
-1/2 Cup Peanut Butter, or other Nut Butter
-1/2 Cup Ground Flaxseed, or Almond Flour
-1/2 Cup Chocolate Chips
-1/3 Cup Honey or Agave Syrup or Maple Syrup
-1 TBSP Chia Seeds or Sesame Seeds or Omit!
-1 TSP Vanilla Extract or Almond Extract
Strawberry Shortcake Bites (Modified from this recipe from My Kids Lick the Bowl)
-1 Cup Dry Oatmeal – old fashioned is best
-1 Cup Frozen Strawberries, or other frozen fruit – whatever you have on hand
-1/2 Cup Coconut Flour or Almond Flour
-2 TBLSP Coconut Oil
-1 Cup Desiccated Coconut
-1/2 Cup Sunflower Seeds or other chopped nut (pecans would be good!)
