Gumdrop Spice Cookies

This recipe hails from Louisa’s Great Aunt Betsy. It makes beautiful, crisp yet chewy cookies.

1 C Gumdrops or Spicedrops, cut in half (you can use up to 1½ C)
2 C Oatmeal (not quick oats!)
1 C Butter (2 sticks)
1 C Granulated Sugar
1 C Brown Sugar (packed)
2 teasp Vanilla
2 C Flour
1 teasp Baking Soda
1 teasp Baking Powder
2 ea Eggs, beaten

Mix gumdrops and oatmeal together. Cream together the butter and two types of sugar. Place flour, soda and baking powder into sifter. Sift a little over the gumdrops and stir together. Sift the remaining flour into the butter alternately with egg, stirring in between. Stir in the gumdrops/oatmeal. Scoop or spoon onto a cookie sheet, and flatten slightly. Bake at 350°F for 8 minutes or until golden. Remove from pan and cool on a rack before eating or storing.
