We always like to have a quick-but-fancy dinner recipe on hand for the unexpected guest – or just as a treat for you and your family. As long as you keep some ingredients on hand – and trust me, you’ll want to have a jar of Midcoast Provisions Blueberry BBQ Sauce in your pantry at all times – the only thing you have to shop for is the fresh fish! Grilled fruit or veggies on the side and a baked potato or rice and you’re good to go. This meal can be made outside on the grill in summer, and inside on cast iron in winter. (We’re doing it inside, but feel free to grill if you want!)
For the Salmon
1-1½# Fresh Salmon fillet – the thicker end is best (about ¼# per person)
Oil
1 Jar Midcoast Provisions Blueberry BBQ Sauce (available at Now You’re Cooking!)
Salt & Pepper to taste
Bring the salmon to room temperature a ½ hour before cooking, and lightly salt & pepper.
Heat a cast-iron skillet on medium-high heat. Add oil when it’s hot.
Place the salmon skin side up on the hot pan and allow to cook for 3-4 minutes until golden brown.
Flip the salmon onto its skin and pour or spoon blueberry sauce on top. Cover and cook another 2-3 minutes.
You can remove the skin or leave it on.
Serve with grilled fruit and rice.
For the Fruit
Any fruit you want, or a combo: pineapple, peaches, plums, and melon are the best choices.
Oil
Salt & pepper to taste (optional) or balsamic vinegar.
Slice pineapple or melon, or halve the peaches etc. Brush with oil, and lightly sprinkle with salt & pepper if desired.
Heat a cast-iron grill pan on high heat.
Brush with oil, and lay fruit on top.
Allow to cook for about 5 minutes, then flip and brown the other side.
Drizzle with balsamic if desired.
For the Rice
1 C Rice
2C Cold Water
Place rice and water in a saucepan with a tight-fitting lid.
Bring to a boil and turn off heat.
Let sit for 20-30 minutes.
