Sous Vide Wild Blueberry Grilled Pork Belly from Midcoast Provisions

Tony, the chef of Midcoast Provisions, will be in our demo kitchen on Thursday, June 23 at 5pm making this Sous Vide Wild Blueberry Grilled Pork Belly recipe, which is a part of their grill meal delivery package.
1?2 C Smoked Paprika
1?2 C Brown Sugar
1?4 C Kosher Salt
2 Tbsp Mustard Powder
1 teasp Black Pepper, freshly ground
2 Tbsp Garlic Powder
1 Tbsp Dried Oregano
1 Tbsp Whole Coriander Seed
1 teasp Red Pepper Flakes
Prepare belly by removing skin and excessive fat.
Divide into 3-inch sections.
Apply a liberal amount of dry rub to all sides of each piece of belly.
Vacuum seal or pack into a zip-lock bag, pressing out as much air as possible.
Prepare water bath, set Sous Vide cooker to 165°F and cook for 12-16 hours.
Remove belly from water bath and chill in ice water bath for later consumption.
Prepare grill to medium-high heat.
Slice pork belly 1?4 to 1?2 inch thick.
Grill slices, being careful of flare-ups, and baste with Midcoast Provisions Maine BBQ while turning multiple times.
Serve with extra sauce, pickled vegetables, and classic BBQ sides!
